Amazed myself with an apple pie this morning – visalus shake recipes

So yesterday I had some apples in the fridge that were starting to go a bit soft.  I’m very conscious about wasting food but these apples would not pass my kids lunch bag screening so I decided to do something different…

Looking in the fridge form some inspiration, I noticed we had a pit of puff pastry dough left over from the mini pot pies I made last week.  So I decided to try and make some apple turnovers.  Now don’t get the wrong idea, I’m no Martha Stewart, it’s just that I now work at home fulltime and since that switch we are eating out much less and also eating much healthier – it’s all part of our bigger shift to healthier living…

Anyway, I peeled and sliced up the apples (about a half dozen) and tossed them in a pot along with a smidge of water so they would stick.  Put the burner on low and forgot about them for about 15 minutes while I worked on some videos I’m producing.

Then I smelled this wonderful odour coming from the kitchen and remember I had to stir my apples.  They were boiling nicely and the mixture was thickening.  They crushed easily in the pot when squished with a wooden spoon so I set the mixture aside to cool a bit and returned to my desk for some more video editing.

Some ViSalus shake recipes are just pure fluke – but they are often the best ones!

About 15 minutes later, I added wads of cinnamon because it tastes amazing, helps prevent cancer and reduces inflammation among other things.  Then I rolled out my pastry dough and cut it into 6 squares of about 4 in. (that’s all I had).  Put a dollop of filling in each and folding diagonally into a triangle (you know what a turnover looks like, right?).  Then I brushed a bit of egg yolk onto each and put them in the oven for about 20 minutes.  After school snack and dessert – Check!  But what to do with the leftover filling?  The part I really like!

Well, I put it in the fridge yesterday and this morning I decided to experiment with my shake.  You can see the complete recipe here as well as other ViSalus shake recipes, but the bottom line is next time, I won’t even make the turnovers!

I will continue making this delicious and nutritious filling and be making apple pie shakes!
